Tomato Korma
Ingredients
1 cup freshly grated coconut
1 tsp fennel seeds

1 cinnamon stick
2 cloves
2 Cardomoms
A green chilli (half slit)
A piece of ginger (minced)
2 garlic cloves (minced)
2 onions (chopped)
2 big tomatoes (chopped)
1/2 tsp red chilli powder
1/4 tsp turmeric powder
Oil for frying
Salt to taste
Curry leaves / coriander leaves
Garam masala
Method
Blend freshly grated coconut & fennel seeds to a fine paste.
Heat oil in a pan.
Add cinnamon, cloves & cardomom.
Then add chopped onions & fry till light golden brown.
Add chopped ginger, garlic ,green chilli along with chilli & turmeric powder;
Then add chopped tomatoes.
Fry for a while & add salt & water.
Cover & cook for a few minuites.
Then add blended coconut & cook for 5 mn.
Garnish with garam masala & chopped coriander leaves.
Goes very well with any type of Indian bread.
