Beetroot Pancakes
Beetroot Pancakes
Ingredients
250g flour
2 tbsp corn flour
2 eggs (beaten)
2 shallots(chopped)
A green chilli(chopped)
A piece of ginger (chopped)
Salt to taste
A small beetroot(chopped)
400ml water
Method
Mix the both flours in a bowl.
Beat eggs with shallots, ginger & chilli.
Peel, chop & blend beetroot to a fine paste with a little water.
Add beaten eggs & beetroot to the flour.
Stir in water & mix well(without any lumps).
If the batter is thick, add some more water.
Keep aside for 15mn.
Heat a nonstick pan / griddle with little oil.
Pour a spoon full of batter.
Cover & cook for a while.
Then flip & cook the other side.
Serve hot with a dipping sauce.
