British Fruit Cake
Fruit Cake
Ingredients
100g candied fruits
50 g raisins
5 cl rum
220g flour
3 eggs(separated)
125g sugar
A pinch of salt
125g butter (melted)
2sp baking powder
Method
Warm rum ina microwave oven & mix it with candied fruits & raisins.
Keep aside for an hour.
Preheat the oven to 180°C.
Beat egg yolks with sugar.
Sieve the flour and baking powder together and fold into the cake mixture.
Add melted butter & mix well.
Beat egg whites with a pinch of salt & add to the cake mixture.
Add raisins + candied fruits along with rum.
If the batter is thick , add some milk.
Pour the batter into the greased cake pan.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 40-45mn
Serve with tea.
