Ricotta Orange Cake
Ingredients
250 g ricotta cheese
150g sugar
150 g almond powder
50g flour
75g butter / 4 tbsp veg oil (melted)
4 eggs (separated)
1/2 tsp vanilla essence
A pinch of salt
1 tsp baking powder
Juice of an organic orange
Finely grated zest of an organic orange
Method
Preheat the oven to 180°C.
Mix egg yolks with almond powder, vanilla essence orange juice & zest.
Sieve the flour and baking powder together and fold into the cake mixture.
Add melted butter & mix well.
Beat eggs with sugar & add to the cake mixture.
Pour the batter into the greased cake pan.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 30 - 35mn.
Serve with Tea.
