Kurdish Carrot Fritters
Carrot Fritters
Ingredients
3 carrots (peeled & finely grated)
3 shallots (chopped)
An onion (chopped)
2 green chillies (chopped)
2 tsp chopped ginger
An egg
120 g bread crumbs
2 tbsp flour
1 tsp coriander powder
2 springs of curry leaves / coriander leaves ( chopped)
Salt to taste

Oil for frying
Method
Wash, peel & grate carrots.
Sqeeze out the juice & trasfer to a mixing bowl.
Add all the other ingredients, mix well & fry immediately
Make berry sized balls & flatten into a disc.
Heat oil in a frying pan.
Cook both sides of the vada's until golden brown.
Remove using a slotted spoon & drain on a kitchen paper.
U can prepare 4/5 vada's at the same time .
Serve hot with tea or as a starter.
