Elumichai Sadam

3 cups cooked Basmati rice / Jasmin rice
* To temper*
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp split urad dal seeds
1 tsp channa dal seeds
A dried red chilli 
2 green chillies (cut in coins)
A piece of ginger
An organic lemon ( rind & juice)
2 springs of curry leaves
Chopped coriander leaves
1 cup peanuts
10 cashew nuts
A pinch of hing
1 tsp turmeric powder
Salt to taste
Oil for frying
Heat oil in a pan & splutter mustard seeds.

Then add dried chilli & curry leaves .
Add peanuts & cashew nuts & fry till light golden brown.
Then add urad dal , channa dal & cumin seeds.
Fry for a while & then add chopped green chilli &  ginger.
Add turmeric powder + hing  & mix well .
Remove from fire & spoon in cooked rice .
Add lemon zest & juice .
Toss several times with a wooden spatule. 
Garnish with fresh coriander leaves & serve .
