1 cup Goan brown rice (riz étuvé)
1 cup grated coconut / dessicated coconut
6 cubes of jagerry
1/4 cup water
1/2 tsp black pepper powder
1/2 tsp fennel seeds powder
1/2 tsp dry ginger powder
1/2 tsp cardomom powder
Dry roast rice, till the grains are brown & crunchy.
Keep aside to cool & then blend into fine powder.
Keep some rice powder aside to roll the balls.
Gently heat jaggery & water to make a thick syrup.
Strain it & keep aside.
Heat the strained jagerry in a thick bottomed vessel along with coconut.
When the mixture thickens, add roasted rice powder.
Stir well so that the powder is well mixed with jagerry.
Remove from fire, add the spices.
Mix well with a wooden spatule & set aside to cool.
Shape into cylindrical shapes & roll in the rice powder.
Store them in an airtight container.
