Aloo tamatar ki rasedar
4 medium size potatoes (Quartered)
A big tomato chopped)
2 green chillies (half slit)
A piece of ginger (chopped)
2 tbsp oil
1 tsp mustard seeds
1/4 tsp methi seeds
Few curry leaves
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1 tsp coriander powder
1 tsp fennel seeds powder
A pinch of hing
Curry leaves / coriander leaves
Salt to taste
Boil the quartered potatoes in salted water until tender (20 mn).
Drain & let it cool.
Peel, mash it & keep aside.
Heat oil in a pan & splutter mustard seeds.
Add methi seeds & curry leaves.
Then add chopped tomatoes along green chilli & ginger.
Fry for a while & then add all the masala powders.
Fry for a while & add a cup of water.
Cover & cook for a while.
When tomatoes are cooked, add mashed potatoes.
Mix well & remove from fire.
Garnish with garam masala & coriander leaves.
Goes very well with Poori & Chapathi.
