Black Forest Yule Log Cake
Ingredients
4 eggs
125g sugar
125g flour
60g butter
2 tbsp cocao powder
1/2 tsp baking powder
1/2 tsp cinnamon powder
*Filling*
150g cream cheese ( Philadelphia)
2 tbsp kirsch
2 tbsp icing sugar
Cherries in syrup.
*Frosting*
150g cream cheese ( Philadelphia)
2 tbsp condensed milk
1 tbsp Icing sugar
*Topping*
Candied cherries
Black chocolate shavings
Method
Mix whipped cream cheese with icing sugar & cherries.
Mix well & keep in the refrigerator for 30mn.
Add kirsch & mix well before spreading.
Add whipped cream cheese with condensed milk & icing sugar .
Mix well & keep in the refrigerator for 30mn.
Preheat the oven to 180°C.
Whisk eggs & sugar for 10mn so that it triple it's volume.
Sieve the flour, chocolate powder & baking powder together and fold into the cake mixture.
Add melted butter & cinnamon powder.
Spread butter paper on a baking tray & spread the batter evenly.
Bake for 10mn until sponge cake is light brown.
Remove frm oven & keep aside to cool.
Spread the cream cheese & cherry filling filling evenly over the sponge.
Fold carefully so that the seam side is facing down.
Peel off the edges.
Spread the cream cheese , condensed milk mix over the roll.
Using a spoon give an appearance of the bark.
Chill for 30mn.
Top with black chocolate shavings & candied cherries.
