Pumpkin Cake
Ingredients
4 eggs
150g sugar
75g butter
250g flour
300g pumpkin puree
100g nuts
50g raisins
1 tsp baking powder
1/4 tsp nutmeg
1/4 tsp cinnamon powder
Method
Cook pumpkin & mash it.(use a blender)
Preheat the oven to 180°C.
Cream together the butter, sugar & salt .
Add beaten eggs & mashed pumpkin.
Sieve the flour and baking powder together and fold into the cake mixture.
Then add nutmeg powder & cinnamon powder.
Mix nuts & raisins in flour & add to the cake mix.
Mix well & pour the batter into the greased cake pan.
Bake until a toothpick inserted into the middle of the cake comes out clean.(30mn)
Serve with tea.
