Malaysian Sardine Sambal
Sardine Sambal
Ingredients
500g sardines
1/2 tsp red chilli powder
1/4 tsp turmeric
Salt to taste

1 potato(peel & cut in fingers)
A red onion (chopped)
A tomato(chopped)
A green chilli (half slit)
1tsp tomato puree
1/2 tsp Kashmir chilli powder
1/4 tsp turmeric powder
2 cloves of garlic (chopped)
A piece of ginger(chopped)
Berry size tamarind pulp
A pinch of cumin powder
Curry leaves
Salt to taste
Method
Soak tamarind in water & keep aside for 10 min.
Extract the juice.
Marinate fish with chili -tumeric & salt & keep aside.
Heat oil in a pan & fry potato fingers.
Drain & keep aside.
In the same pan fry the marinated sardines & drain on a kitchen paper.

Heat oil in pan & add chopped onions.
When light brown, add chopped ginger +garlic & green chilli.
Then add chilli+ turmeric powder along with tomato puree.
Then add chopped tomatoes & stir.
Fry for a while & then add tamarind extract.
When the tomaoes are cooked, add fried potaoes & sardines.
Simmer & cook for another 5mn.
Garnish with cumin powder & curry leaves.
Just swirl the vessel & remove from fire.
Serve with rice.
