Mascarpone Orange Cake
Ingredients
4 eggs
200g flour
200g sugar
35g butter (melted)
100g mascarpone
1 tsp baking powder
Juice of an orange
Rind of an organic orange
1 tbsp Marsala
Almond flakes (optional)
A pinch of salt
Method
Preheat the oven to 180°C.
Cream together mascarpone, butter, sugar & salt .
Add beaten egg & mix well.
Sieve the flour and baking powder together and fold into the cake mixture.
Add orange juice, orange rind, marsala & mix well.
Pour the batter into the greased cake pan & top with almond flakes.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 30-35 mn.
Serve with tea.
