Sweet Potato Vattayappam
Ingredients
2 cups basmati rice
1 cup freshly grated coconut
10 g fresh yeast
1 tsp sugar
5 tbsp sugar
3 tbsp mashed sweet potato
1/2 tsp salt
Raisins & chopped cashew nuts
Method
Dilute yeast in luke warm water with 1 tsp sugar .
Set aside for 15 minuites.

Soak rice grains for 2 hours.
Drain & keep asideblend to a fine paste.
Blend 3 tbsp rice grains with one cup of water & cook in medium heat for 5min.
When it thickens, transfer to a bowl.
Then blend rest of the rice grains along with grated coconut.
Add mashed sweet potatto & blend once more.
Then add diluted yeast, sugar & salt.
Mix well & keep aside for 4 hours in a warm place
If the batter is thick add some water.
Grease the mould with oil & pour the prepared batter.
Decorate with raisins & chopped nuts
Steam for 15 mn.
