Coconut Dosa with Carrot - Karnataka Special
Ingredients
3/4 cup splitted urad dal(uzhunnu parippu)
2 cups ponni rice
1 tsp fenugreek seeds
1 cup freshly grated coconut
Salt to taste
Water

2 carrots ( peel & chopped)
2 green chillies (chopped)
Curry leaves(chopped)
Oil for frying (sesame oil)
Method
Wash & soak rice for 4 hours.
Soak urad dal & fenugreek seeds in a bowl for 4 hours.
First blend rice to a fine paste & transfer to a bowl.
Then blend dal, grated coconut & carrot chunks.
Mix with the rice batter & the add salt, chilli & curry leaves.
Add water to the batter to get a semi liquid stage.
Cover & keep aside for 2 hours.

Heat a nonstick pan / griddle with little oil.
Pour a spoon full of batter & spread carefully.
Dribble some oil over the dosa.
Flip & cook the other side.
Serve hot with chutney / curry.
