Chettinad Chicken Curry

Chettinad Chicken Curry

Ingredients 
A chicken (chopped)
1 tsp red chilli powder
1/2 tsp turmeric powder
1 tbsp lemon juice
1 tsp salt
*Chettinad Masala*
1 tbsp oil
A piece of cinnamon
2 cloves
2 petals of star anise
2 cardomom pods
5 pepper corns
1/2 tsp cumin seeds 
1 tsp fennel seeds
3 tbsp grated coconut
3 shallots (chopped)
1 tbsp coriander powder
1 tsp red chilli powder
1/2 tsp turmeric powder

1 tbsp oil
Few curry leaves
2 onions (sliced) 
A tomato (sliced)
1 green chilli (half slit)
A piece of ginger(chopped)
2 garlic cloves (chopped)
Berry size tamarind pulp
Salt to taste
Curry leaves / Coriander leaves
Method
Marinate the chicken with first five ingredients & keep aside.
Soak tamarind in water & keep aside for 10 min. Extract the juice & keep aside.

Heat oil in a pan & add spices .
Fry for a while & then add chopped shallots & garlic. 
When light golden brown , add cumin seeds,fennel seeds & black pepper corns .
Then add grated coconut .
When the coconut turns light golden brown add powders (coriander,chilli powder& turmeric).
Mix well & set aside to cool.
Add some water & grind to a fine paste.

Heat oil in a pan & add curry leaves.
Then add sliced onions & fry till light golden brown.
Add  green chilli, chopped ginger & garlic.
Fry for a while & then add sliced tomatoes.  
Then add marinated chicken & mix well. 
Add blended chettinad masala paste &  tamarind extract,
Close with a lid & cook for 15 mn stiring from time to time.
Garnish with coriander leaves  & curry leaves.
Se
rve with  rice / any type of Indian bread.
