Sweet Potato Pancake
Ingredients
Quarter of a sweet potato (small)
150ml milk
1/4 tsp nutmeg powder
***
160g flour
60g sugar
25g butter(melted)
An egg (beaten)
A pinch of salt
1/2 tsp baking powder
Method
Wash , peel & cut sweet potato in cubes.
Cook it in a milk.
When cooked, mash it in a blender.
Transfer to a bowl & then add sugar & nutmeg powder.
Mix first rest of the ingredients (without any lumps)
Keep aside for half an hour.
Heat a nonstick pan / griddle with little oil.
Pour a spoon full of batter.
Flip & cook the other side.
Eat with the topping of your choice.
