Burmese Crispy Pancake- Happy Pancake Day !
Ingredients
100g flour
50g rice flour
50g sugar
50g melted butter
1 tsp baking powder
A pinch of salt
50 ml Coconut milk
250ml luke warmwater

1 cup grated Palm jaggery
2 tbsp water
1/2 tsp cardamom powder

Freshly grated coconut
Method
Mix first eight ingredients (without any lumps) in a bowl .
Keep aside for half an hour.
If the batter is thick, add some more water.

Melt palm sugar & garnish with cardomom powder
***
Heat a non stick pan & add a knob of butter.
When it's melted add a ladle of batter & spread it.(in a circular way).
Spoon jagerry syrup over the pancake & spread it.
Then scatter freshly grated cococut over it.
Carefully fold & cook both sides.
