Spicy Burmese Pancake
Ingredients
300g rice flour
2 eggs (beaten)
10 g fresh yeast / 1 tsp yeast granules
1 tsp sugar
Salt to taste
Water
Oil for frying

2 carrots(peel & scraped)
2 green chillies( chopped)
1 tbsp roasted sesame
Coriander leaves / Curry leaves (optional)
Method
Dilute yeast in luke warm water with 1 tsp sugar.
When it bubbles, add to the rice powder.
Mix well & then add beaten eggs.
Add water to the batter to get a thick pancake batter.
Cover & keep aside for an hour.
Add baking powder & mix well .
Mix all the topping ingredients together in a bowl.
Heat a nonstick pan / griddle with little oil.
Pour a spoon full of batter .
Top with carrot mix & dribble some oil over the pancake.
Flip & cook the other side.
Serve hot with chutney / curry.
