Avocado Walnut Bread
Ingredients
1 ripe avocado / butter fruit (mashed)
150g sugar
Juice of half lemon

220g flour
100g butter(melted)
A pinch of salt
2 eggs
1/2 tsp nutmeg powder
2 tsp baking powder
Zest of an organic lemon
Walnuts (chopped)
Method
Preheat the oven to 180°C.
Mash avocado & mix with lemon juice & sugar.
Add melted butter & mix well.
Add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Add chopped walnuts & lemon zest .
Mix & pour the batter into the greased cake pan.
Bake for 40-45mn until risen & golden-brown.
Serve with tea.
