Caribbean Plantain Bread
Ingredients
A ripe plantain (steam cook & mashed)
125g mascarpone
2 tbsp date paste
200g sugar
A pinch of salt
1 tsp vanilla essence
200g flour
1/2 tsp nutmeg powder
1/2 tsp cinnamon powder
3 eggs
1 tsp baking powder
1 tsp baking soda
Raisins (optional)
Nibbed almonds for topping
Method
Preheat oven to 180°C.
In a bowl beat eggs.
Melt butter along with date paste.
Then add mashed banan & mix well.
Cream together the mascarpone, sugar & salt & add to the banana.
Add beaten egg & mix well.
Sieve flours, spices and baking powder together and fold into the cake mixture.
Add raisins & vanilla essence.
Mix well & pour the batter into the greased cake pan.
Top with nibbed almonds & bake for 30-35mn.
Cut & serve for tea.
