Tomato Rice

Tomato RiceIngredientsA small piece of ginger2 garlic cloves2 onions (chopped)3 tomatoes(chopped)1 tsp red chilli powder4 cups Basmati rice6 cups water1 tsp salt50 g butter / 2 tbsp Veg oil1 cinnamon stick3 cardomom pods3 cloves.2 bay leavesCoriander leavesMethodBoil water, add salt & keep aside. Tarte des demoiselles Tatin

French greets autumn season by preparing their famous " Tart Tatin".It's just an upside down Apple Tart.There is a legend behind this desert.Two spinster sisters Stéphanie & Caroline inherited their father's hotel in Lamotte-Beuvron.Caroline Tatin greeted the clients & Stéphanie Tatin managed the cuisine.Their apple tarts were famous for it's flavour & texture.During a busy hunting season Stéphanie fogot to cover the tart tin with the flaky pastry. It's Autumn.

L'automne est arrivé.Les pommes de toutes les couleurs et de toutes les saveurs réchauffent nos palais. Autumn is wheezy, sneezy & freezy. But "Apples in October" warm up our palates.

Palais Carnolès - Menton

Palais Carnolès - Menton Menton is a pleasant town situated in the French- Italian border.This town is famous for it's "Citrus Festival" which is hosted every year in February. There is a collection of citrus trees in the orchard of Palais Carnolès. Jardin du Palais Carnolès présentent une collection originale de kumquats, pamplemoussiers, cédratiers, mandariniers, clémentiniers et bigaradiers.

Imqaret- Date filled snacks of Malt.

ImqaretIngredients400g flour 75g sugar1/2 tsp baking powder1eggFilling250g date pastechopped nuts1 tsp cinnamon powderMethodMix first four ingredients & keep aside for an hour.Roll out the dough & cut in 10 cm discs. Poori - Galettes de blé frites

Poori ( Puffed Indian bread )   Ingredients500 g flour250 ml water1 tsp saltoil for fryingMethodMix first three ingredients & knead well.Cover the bowl with a damp cloth & keep aside for 1 hour.Take a lemon sized ball & flatten it using a roller( 8/10 cm discs).Repeat the process with other dough balls. Heat plenty of oil.Gently slip the disc in hot oil.When poori pops fully, splash hot oil on the top.Turn over & fry the other side.Remove using a slotted spoon & drain on a kitchen paper. Kefta à la marocaine

Rose milk

Rose milk / Falooda Ingredients500 ml milk125 g rose almond paste 1 tsp rose essenceAn apple (scraped)MethodBoil milk & add almond paste.Stir continuosly.Add rose essence & apple. If needed add some sugar. Chill & serve.This is an excellent nourishing drink for kids.
