Onion Uthappam

  Onion uthappam   Ingredients1 cup rice flour1 cup urud dal powder3 cups water1 tsp salt1/2 tsp fenugreek powder2 shallots finely chopped1 green chilli( chopped)Chopped curry leaves MethodMix all the ingredients & keep aside for one hour.Heat a nonstick pan / griddle with little oil. Pour a spoon full of batter. (Don't spread)Cook both sides .   Serve hot with chutney / curry.

Spicy Squid Fry

Spicy Squid Fry Ingredients500g squid (cut it into thin rings)1 tbsp tomato purée2 onions( finely chopped)1 tsp ginger-garlic paste1 tsp chilli powder1/2 tsp turmeric powderSalt to tasteOil for fryingCurry leavesMethodFry onions till light golden brown.Then add  ginger- garlic paste & fry again.Add add tomato purée & squid.Add water,salt & cook for a 30 mn.When the sauce is reduced, remove from fire.Garnish curry leaves.

Agriculture Fair in Paris.

Salon Internationale de L'Agriculture Every year , in the first week of March Paris hosts an International Agriculture Fair . This enables the Parisienne kids to admire the livestock of their country. Kids can feed & milk animals. Above all they can taste the agricultural products.

Cauliflower Pakoda

Cauliflower PakodaIngredients4 tbsp gram flour 1 tsp red chilli powder 1/2 tsp salt 1 tsp crushed cumin seeds 1/2 tsp ginger paste1/2 cauliflowerCurry leaves / Coriander leavesOil for fryingMethodMake a batter using first five ingredients & water. Keep aside.Separate the cauliflower florets. Mix with 1 tsp salt & steam for 6 min.Heat oil in a pan. Take each floret, dip in the batter & fry till golden brown.Remove using a slotted spoon & drain on a kitchen paper. Serve hot with or as a starter.

Besan Ke Ladoo

Besan Ke LadooIngredients 100g semolina100g gram flour150 g sugar (powdered)100 g butter2 tbsp milk1/2 tsp cardomom powderCashews & raisinsMethodDry roast semolina & gram flour separately. This must be done in low fire.Stir continuosly till light golden brown.Keep aside.Melt ghee & pour into the roasted stuff. Add fried cashews, raisins,powder sugar & cardomom powder. Add milk & mix well.Cool & shape into ladoos.

Porotta / Paratha

Porotta Ingredients500 g flour250 ml water1 tsp saltOil /gheeMethodMix first three ingredients & knead well.Cover the bowl with a damp cloth & keep aside for 1 hour.Spray some more flour & knead it again .Make evenly sized balls. Take a lemon sized ball & flatten it using a roller.Spread some oil & fold as in the photo.Stretch it & roll from either sides.Clip one roll into another.Repeat the process with other dough balls.Now roll out the porotta's.Heat a non stick pan .
