Rice noodles / String hoppers

  Idiyappam / Noolputtu (Kerala speciality)Ingredients200 g rice powder250 ml water ( I took 125 coconut milk + 125 water)30 g butterShredded coconutsalt to taste.   Method Boil water. Add butter & rice powder.Stir with a wooden spatule & remove from fire.Then add coconut milk.Cover with a damp cloth & leave for a few minuites.Knead it into a smooth dough.Grease the idiyappam mould & Idli maker.Take a dough ball & press it.Put 1 tsp of shredded coconut (fresh) on each idiyappam.Steam for about 10... Kannan Pathiri - Malabar Muslim Special

Kannan Pathiri Ingredients 500 g flour 250 ml water 1 tsp salt oil for frying Method Mix first three ingredients & knead well. Cover the bowl with a damp cloth & keep aside for an hour. Take a lemon sized ball & flatten it using a roller. Spread 1 tsp oil on the flattenened disc. Transform the disc into a square.(as in fig) Then take the four corners &  join in the middle. Chulcha Paratha

 Soft Chulcha Paratha Ingredients400g flour100g semolina1 tsp salt100 ml milk200 ml luke warm water1 onion  (chopped)1 green chilli (chopped)chopped curry leaves20g fresh yeast or (2 tsp dried yeast )1 tsp sugarMethodDilute yeast in warm water with 1 tsp sugar . Neyychorru - Malabar Ghee Rice

French Beans - Lentil Fry

French Beans - Lentil Fry Ingredients1/2 cup lentil seeds250 g french beans1 tsp mustard seeds1/2 tsp cumin seeds2 chopped shallots1 tbsp dessicated coconut / grated coconut1/2 tsp turmeric powder1 tbsp oil1/2 tsp salt1/4 tsp chilli powdercurry leaves1/2 tsp cumin powderMethodCook lentils & keep aside. Indian Fruits Salad

Indian Fruits SaladCut all the fruits.(canteloupe, banana, apples, cherries, apricots)Press one orange & add to the fruits Mix all the fruits in a salad bowl. Cover & chill. To make custurdDilute 30g of custurd powder in cup of milk(without any lumps).Boil 1/2 l milk. Add 50g sugar. Then add the prepared custurd powder. Stir continously. Cool & refrigerate it. Pour the chilled custurd on the the fruits, toss & serve.Decorate with cherries.

Crêpes mille trous

Pancake with thousand holes Ingredients250 g Semolina 250ml milk1 egg30 g Fresh Yeast 1 glass of water 1/2 tsp saltMethod Heat  milk & water  until just warm . Don't boil . Dilute yeast in it.Add egg, semolina & salt . Mix well & keep aside for 4 hours.In a nonstick pan make the pancakes. Wait until the whole pancake is covered with holes.Cook the other side.Serve with honey / maple syrup / sweetened coconut milk .

Neyy Pathiri - Malabar Special

 Neyy Pathiri  Ingredients2 cups roasted rice powder  3 cups of water1 tsp fennel seeds1 tsp salt2 tbsp dessicated coconut / 2 tbsp grated coconut2 shallotscurry leavesOil for fryingMethod Blend coconut, shallots, curry leaves & fennel seeds in a mini food processor. Don't make a paste. Boil water . Add salt & blended mixture.Then add rice powder & mix with a wooden spatule .Remove from fire & close with a lid.
