  Fig Fudge / Fig Halwa Ingredients75 g jaggery / refined molasses . (15 pieces)2 tbsp water1 soup bowl mashed fresh fig ( 25 figs )2 tbsp flour1/2 tsp cardomom powder 50 g butterRasins & Cashews MethodGently heat jaggery & water to make a thick syrup.Strain it & keep aside. Cantaloupe Custurd Pie

Cantaloupe Custurd Pie Ingredients1 frozen pastry 1 cantaloupe30g custurd powder60 g sugar1/2 l milk 1/2 tsp ground cinnamon1 tbsp confectioners sugar Almonds & sultanas for decoration Method. Wash cantaloupe. Peel, seed, and cut  in chunks.Dilute 30g of custurd powder in cup of milk(without any lumps).Boil  milk. Add 60g sugar. Then add the custurd powder mixture. Stir continously. MalpuriIngredients100g flour25g semolina1 tbsp poppy seeds1 tbsp curd1/2 tsp baking powder3 cardomom pods (1/2 tsp cardomom powder)100 g sugar150 ml wateroil for fryingMethodMix the first five ingredients & keep aside.Make a thick syrup using sugar & water. Cool it.Add this cold syrup to the flour mixture.Add cardomom powder & mix well. Keep aside for half an hour. Sauce (yaourt et mangue)

Mango PachadiIngredients1/2 tsp cumin seeds1/2 tsp musturd seeds 2 tbsp grated coconut1 unripe mango (finely chopped)1 tsp salt1 green chilli1 tsp chopped ginger2 curds (125g each)1/2 tsp  cumin powder For seasoning1 tbsp grated coconut1 tsp musturd seeds1 dried red chillicurry leaves Method Grind the first three ingredients into smooth paste & keep aside (2 tbsp cocounut, musturd & cumin seeds)Cook mango in a cup of water with chilli & ginger. Rice noodles / String hoppers

  Idiyappam / Noolputtu (Kerala speciality)Ingredients200 g rice powder250 ml water ( I took 125 coconut milk + 125 water)30 g butterShredded coconutsalt to taste.   Method Boil water. Add butter & rice powder.Stir with a wooden spatule & remove from fire.Then add coconut milk.Cover with a damp cloth & leave for a few minuites.Knead it into a smooth dough.Grease the idiyappam mould & Idli maker.Take a dough ball & press it.Put 1 tsp of shredded coconut (fresh) on each idiyappam.Steam for about 10...
