Bolo de Cenoura - Portuguese Carrot Cake

Bolo de Cenoura  Ingredients 4 carrots  (peel & grated)  4 eggs 200 g flour 200g sugar200g butter (melted)1 tbsp liquid caramel / honey 1/2 tsp cinnamon powder1 tsp baking powderA pinch of salt* Chocolate icing *200g dark chocolate2 bsp melted butter2 tbsp icing sugarMethodPreheat the oven to 180°C. Beetroot Crumpets Ingredients1 small beetroot300g flour2 eggs (beaten)1tsp salt250ml water125ml luke warm milk5g fresh yeast ( 1 tsp yeast granules)MethodDilute yeast in luke warm milk.
