Chettinad Fried Fish

Chettinad Fried Fish Ingredients  5 Salmon pieces or any other fish Salt to taste1 tbsp fresh lime juice***1 tsp red chilli powder1/4 tsp coriander powder1/4 tsp turmeric powder2 shallots + 1 garlic clove + small piece of gingerOil for fryingMethodWash fish & blot dry with kitchen paper. Saffron Crumpets

Saffron CrumpetsIngredients300g flour2 eggs (beaten)1tsp salt250ml warm water125ml luke warm milk5g fresh yeastFew saffron strandsMethodDilute yeast in luke warm milk. Keep aside.Soak saffron strands in warm water. Mix first four ingredients (without any lumps) in a bowl .Add milk & stir again. Keep aside for half an hour.Heat a nonstick pan / griddle with little oil. Pour a spoon full of batter & wait till bubbles appear.Flip & cook the other side.Eat with the topping of your choice. Champorado - Filipino Chocolate-Rice Porridge

  Champorado Ingredients1 cup water2 cups milk2 cloves 7 g vanilla flavoured sugar (sucre vanillé)6 squares of black chocolate1 cup brocken white rice grains (washed & drained)1/2 tin sweetened condensed milkA pinch of salt1/4 tsp cinnamon powderMethodCook rice with first four ingredients.When cooked, add chocolate & condensed milk .Stir well  & then add pinch of salt & cinnamon powder.Remove from fire & transfer into serving cups.Dust wih chocolate powder on the top &...
