Beetroot Cake
Beetroot Cake
Ingredients
200g butter
200g sugar
200g flour
200g beetroot (cooked & mashed)
3 eggs
2 tsp baking powder
a pinch of salt
1 tsp cinnamon powder
Raisins & dried cranberries (optional)
Method
Preheat the oven to 180°C.
Cream together the butter, sugar & salt .
Add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Add mashed beet, & cinnamon powder
Pour the batter into the greased cake pan.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 35-40 mn.

Salty & Spicy Cake
Salty & Spicy Cake 
Ingredients
125 g yogurt
150 g flour
2 tbsp olive oil
2 tsp baking powder
4 eggs
1 tsp salt
1/2 cup ham ( finely sliced)
5 pitted olives (finely sliced)
2 shallots (finely chopped)
1 red chilli (finely chopped)
Curry leaves (finely chopped)
Chopped walnuts / almonds
Method
In a bowl beat eggs.
Sieve the flour and baking powder together and fold into the egg mixture.
Add yogurt & olive oil & mix well.
Stir in ham, olives, shallots, chilli, nuts & curry leaves.
Pour the batter into the greased cake pan (rectangular).
Bake for 45 mn - Th 180°C.
Serve as a starter.

Chocolate Cake
Chocolate Cake
Ingredients
125 g flour
125 g sugar
125 g butter
3 eggs
3 tsp baking powder
200 g black chocolate
2 tbsp water
Glaçage
120 g chocolate,
3 tbsp water
30 g butter
2 tbsp icing sugar
Method
Break the chocolate bar & add 2 tbsp water.
Melt in microwave oven 2 mn.
Abb butter & mix well.
In another bowl beat eggs & sugar.
Sieve the flour and baking powder together and fold into the cake mixture.
Add chocolate butter mixture & mix well.
Pour the batter into the greased cake pan(oval).
Bake for 45 mn - Th 180°C.
Decoration
Glaze the cake & decorate with candies as shown in photo.

Victoria Sponge Cake
Victoria Sponge Cake
Ingredients
175 g butter
175 g sugar
175 flour)
3 eggs
3 tsp baking powder
a pinch of salt
zest of one lemon / 1 tsp vanilla essence
Method
Preheat the oven to 180°C.
Cream together the butter, sugar & salt on medium speed with a paddle attachment.
Add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Add essence/ zest of lemon .
Pour the batter into the greased cake pan and place in the oven.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 25 minutes.
Serve with tea.
[Choose a suitable filling - Strawberry jam/ Chocolate / Cream]
Dust with icing sugar before serving.

Norwegian Apple Cake
Norwegian Apple Cake 
Ingredients
100g butter
10dl liquid cream (15%)
200g sugar
180g flour
2 eggs
3 tsp baking powder
a pinch of salt
for topping
2 apples (peel,core & cut into thin slices)
25g sugar
1 tsp cinnamon powder
Raisins & chopped walnuts (optional)
Method
Preheat the oven to 200°C.
Cream together the butter, sugar & salt .
Add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Heat first two ingredients on medium heat & add to the mixture.
Pour the batter into the greased cake pan.
Arrange apple slices on the top & sprinkle (sugar+ cinnamon) mix.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 25-30 minutes.
Serve with tea.

Banana Cake

Ingredients
135 g butter
100g sugar
225g flour
2 eggs
3 ripe bananas
2 tbsp honey
a pinch of salt
1 tsp cinnamon powder
2 tsp baking powder
Raisins & chopped walnuts
Method
Preheat the oven to 180°C.
Cream together the butter, sugar & salt .
Add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Add mashed bananas, honey & cinnamon powder.
Pour the batter into the greased cake pan and place in the oven.
Bake until a toothpick inserted into the middle of the cake comes out clean, about 40 minutes.
Serve with tea.

Semolina Cake
Burmese Semolina Cake

Ingredients
2 tbsp sesame seeds
180 g semolina
250g sugar
125g butter
3 eggs
400ml coconut milk / milk
1/2 tsp cardomom powder
A pinch of salt
Method
Toast sesame seeds till golden brown & keep aside.
Mix semolina + milk + sugar in a sauce pan.
Put over medium heat & stir continuosly.
When the mixture thickens, add butter & stir again.
When the mixture leaves the sides of the pan, remove from fire.
Add ground cardomom, salt & beaten egg yolks.
Gently fold in the whisked egg whites & mix well.
Pour the batter into the greased cake pan.
Sprinkle toasted sesame seeds.
Bake for 40-50 minutes . Th-160°
Cool, cut in to desired shapes & serve.

Swiss Carrot Cake - Ruebli Torte
Swiss Carrot Cake 
Ingredients
300g carrot (grated)
250g almond powder
4 eggs
200g sugar60g flour
1 tbsp baking powder
Half lemon(finely grated zest & juice)
1/4 tsp cinnamon powder
A pinch of salt
For Icing
1 tbsp lemon juice / kirsch
150g icing sugar
1 egg white
50g almonds toasted & chopped.
Method
Preheat Oven to 180°C.
Whisk egg whites & keep aside.
In a bowl, mix the sugar, egg yolks and a pinch of salt.
Stir in the lemon zest and juice.
Sieve the flour and baking powder together.
Add this to the cake mixture along with cinnamon powder, almond powder & carrots.
Gently fold in the whisked egg whites & mix well.
Pour the batter into the greased cake pan.
Bake for 40-50 minutes.
Insert a skewer into the centre of the cake.
If it comes out clean, remove from the oven & let it cool for 10 mn.
You can just dust the cake with icing sugar or glaze it.
To glaze the cake do as follows.
For Icing.
Mix icing sugar with lime juice & egg white.
Pour this smooth paste over the cake & spread evenly.
Coat the sides of the cake with roasted almonds .

Le Gâteau "Terrain de Football"
Football Ground Cake

Ingredients
125 g flour
125 g sugar
125 g butter
3 eggs
3 tsp baking powder
200 g black chocolate
2 tbsp water
For icing
1 egg white
450 g icing sugar
green colour
For decoration
candies
1 kitkat (ball)
Method
Break the chocolate bar & add 2 tbsp water.
Melt in microwave oven 2 mn.
Add butter & mix well.
In another bowl beat eggs & sugar.
Sieve the flour and baking powder together and fold into the cake mixture.
Add chocolate butter mixture & mix well.
Pour the batter into the greased cake pan(rectangular).
Bake for 30 minutes, Th 180°C.
Beat icing sugar & egg white.
Keep aside 2 tbsp of the icing to draw the boundary line.
In the rest, add green colour & mix well.
Glaze the cake & decorate with candies as shown in photo.

Gâteau Ardéchois
Ardèche cake
Ingredients
200g unsweetened chestnut purée
100g butter
100g sugar
(If using sweetened purée add 25g sugar)
100g flour
2 eggs
a pinch of salt
2 tsp baking powder
2 tbsp rum / 1 tsp vanilla essence
Add raisins/ walnuts if needed.
Method
Preheat the oven to 180°C.
Cream together the butter, sugar, purée & salt on medium speed with a paddle attachment.
Add beaten eggs.
Sieve the flour and baking powder together and fold into the cake mixture.
Add essence/ rum .
Pour the batter into the greased cake pan and place in the oven.
Bake until a skewer inserted into the centre of the cake comes out clean(40 mn).
Serve hot / cold.
