Carrot-Mint Paratha

Carrot-Pudina ParathaIngredients 4 carrots2 green chilliesA piece of gingerHandfull of mint leaves500 g flour250 ml luke warm water1 tsp saltOil Method Blend first four ingredients in a mixer & add to the flour.Mix all the other ingredients & keep aside for 2/3 hours.Make evenly sized balls. Take a lemon sized ball & flatten it using a roller. Heat non stick pan . Pizza-Paratha

Kessra - Moroccan Rotti

Kessra Ingredients  500g semolina1 tsp salt1 tsp yeast granules1/2 glass olive oil / vegetable oil300 ml luke warm waterMethodMix all the ingredients & keep aside for 3 hours.Make orange sized balls.Take a dough ball & pat it into thick rotti.Heat a non stick pan , grease & cook the rotti.Using a fork prick all over the rotti. Flip & cook the other side. Repeat the process with other dough balls. Serve with Veg/Non veg Curry.Moroccans serve with tajine.Thanks to Cherazade for this recipe.

Carrot poli

Carrot poli Ingredients: 3 carrots1 cup dessicated coconut 1/2 tsp Cardamom powder2 cups sugar3 cups FlourGhee A pinch of salt     MethodCook carrots in two cups of water.When cool, grind  in a blender. Heat ghee in a sauce pan.Add the blended carrots, coconut & sugar .Stir till the mixture becomes dry. Msemmens - Moroccan Chappathi

Take a lemon sized ball & flatten it using a roller.Spread some oil & fold as in the photo.Repeat the process with other dough balls.Now roll out into square shaped Msemmens.Heat a non stick pan . Porotta / Paratha

Porotta Ingredients500 g flour250 ml water1 tsp saltOil /gheeMethodMix first three ingredients & knead well.Cover the bowl with a damp cloth & keep aside for 1 hour.Spray some more flour & knead it again .Make evenly sized balls. Take a lemon sized ball & flatten it using a roller.Spread some oil & fold as in the photo.Stretch it & roll from either sides.Clip one roll into another.Repeat the process with other dough balls.Now roll out the porotta's.Heat a non stick pan . Murtabak - Singapore Bread
