Steamed Rice Rotti / Spicy Orotti - Kerala Special

Leek Paratha

Leek ParathaIngredients 1 leek (thinly sliced) 2 green chillies (chopped)2 shallots (chopped)A piece of ginger (chopped)1 tsp fennel seeds2 eggs1 yogurt (125 g)200g semolina250 g flour1 tbsp olive oil1 tsp saltChopped curry leaves Oil  Method Fry first five ingredients till translucent & keep aside.Beat two eggs & add to the mixture.Mix all the other ingredients & keep aside 1 hour.Make evenly sized balls. Lefse - Norwegian Potato bread

Lefse Ingredients400g potatoes (4 mashed / riced potatoes)40ml milk / cream20g butter200g flourSalt to tasteMethod Mix all the ingredients & keep aside for one hour.Make evenly sized balls. Take a lemon sized ball & roll out into paper thin Lefse Heat non stick pan . Spread oil on it .Cook the roll out lefse.Spread some oil & press the edges.Flip & cook the other side.Repeat the process with other balls. Serve hot with veg / non veg curry.

Langos - Hungarian Fried Bread

Spicy Langos ingredients500g wheat flour4 medium sized potatoes(mashed)1 tsp yeast granules1 tsp salt1 tsp sugar3 shallots finely chopped2 chillies finely choppedCurry leaves chopped1 tsp Fennel seeds Oil for frying MethodDilute yeast in luke warm water with 1 tsp sugar . Steamed Jackfruit Cake

Chakka AdaIngredients 2 cups rice powder  1 cup of coconut milk1 cup mashed jackfruit2 tbsp freshly grated coconut/ dessicated coconut3 tbsp sugar  / 5 jaggery cubesRaisins & chopped cashews1/2 tsp cardomom powderA pinch of saltMethod Blend pitted jackfruit into a fine paste.If the jackfruit is not that ripe, cook for 5mn in water & then blend.Mix all the ingredients & keep aside for sometime. Kessra - Moroccan Rotti

Kessra Ingredients  500g semolina1 tsp salt1 tsp yeast granules1/2 glass olive oil / vegetable oil300 ml luke warm waterMethodMix all the ingredients & keep aside for 3 hours.Make orange sized balls.Take a dough ball & pat it into thick rotti.Heat a non stick pan , grease & cook the rotti.Using a fork prick all over the rotti. Flip & cook the other side. Repeat the process with other dough balls. Serve with Veg/Non veg Curry.Moroccans serve with tajine.Thanks to Cherazade for this recipe.
