Kannan Pathiri - Malabar Muslim Special

Kannan Pathiri Ingredients 500 g flour 250 ml water 1 tsp salt oil for frying Method Mix first three ingredients & knead well. Cover the bowl with a damp cloth & keep aside for an hour. Take a lemon sized ball & flatten it using a roller. Spread 1 tsp oil on the flattenened disc. Transform the disc into a square.(as in fig) Then take the four corners &  join in the middle. Chulcha Paratha

 Soft Chulcha Paratha Ingredients400g flour100g semolina1 tsp salt100 ml milk200 ml luke warm water1 onion  (chopped)1 green chilli (chopped)chopped curry leaves20g fresh yeast or (2 tsp dried yeast )1 tsp sugarMethodDilute yeast in warm water with 1 tsp sugar . Set aside for 15 minuites.Mix all the ingredients with the wooden spoon.   Cover the bowl with a cloth & leave for 1or 2 hours,  until it's doubled.If the batter is thick add some more water. Neyy Pathiri - Malabar Special

 Neyy Pathiri  Ingredients2 cups roasted rice powder  3 cups of water1 tsp fennel seeds1 tsp salt2 tbsp dessicated coconut / 2 tbsp grated coconut2 shallotscurry leavesOil for fryingMethod Blend coconut, shallots, curry leaves & fennel seeds in a mini food processor. Naan - North Indian Bread

Soft Naan Bread   Ingredients500g flour1 yogurt ( 125g)1 egg1 tsp salt20g fresh yeast or (2 tsp dried yeast )1 glass luke warm water.     1 tsp sugar MethodDilute yeast in luke warm water with 1 tsp sugar . Set aside for 15 minuites.Mix all the ingredients with the wooden spoon.   Cover the bowl with a cloth & leave for 1or 2 hours,  until it's doubled.Spray some more flour & knead it again & make 7 balls.
