Mooli Paratha

Radish ParathaIngredients A bunch of radishes(15)2 tbsp scraped fresh coconut / dessicated coconut2 green chilliescurry leaves1 tsp fennel seeds500 g flour250 ml luke warm water1 tsp saltOil Method Blend first five ingredients in a mixer & add to the flour.Mix all the other ingredients & keep aside for 2/3 hours.Make evenly sized balls. Carrot poli

Carrot poli Ingredients: 3 carrots1 cup dessicated coconut 1/2 tsp Cardamom powder2 cups sugar3 cups FlourGhee A pinch of salt     MethodCook carrots in two cups of water.When cool, grind  in a blender. Heat ghee in a sauce pan.Add the blended carrots, coconut & sugar .Stir till the mixture becomes dry. Msemmens - Moroccan Chappathi

Msemmens Ingredients200 g flour200g semolina250 ml water1 tsp saltOil /gheeMethodMix first four ingredients & knead well.Cover the bowl with a damp cloth & keep aside for 1 hour.Spray some more flour & knead it again .Make evenly sized balls. Take a lemon sized ball & flatten it using a roller.Spread some oil & fold as in the photo.Repeat the process with other dough balls.Now roll out into square shaped Msemmens.Heat a non stick pan . Porotta / Paratha

Porotta Ingredients500 g flour250 ml water1 tsp saltOil /gheeMethodMix first three ingredients & knead well.Cover the bowl with a damp cloth & keep aside for 1 hour.Spray some more flour & knead it again .Make evenly sized balls. Kannan Pathiri - Malabar Muslim Special

Kannan Pathiri Ingredients 500 g flour 250 ml water 1 tsp salt oil for frying Method Mix first three ingredients & knead well. Cover the bowl with a damp cloth & keep aside for an hour.
