Sanna - Goan Special

Sanna  Ingredients2 cups white rice / basmati1 cup cooked rice1 cup freshly grated coconut10 g fresh yeast 1 tsp sugar 125g yogurt (optional)Salt to tasteMethodSoak rice in water & leave aside for 5 hours.Dilute yeast in luke warm water with 1 tsp sugar . Cannelettes - Pancakes of Bordeaux !!

Cannelettes Ingredients150g flour (Type 45)250g sugar30g butter(melted)2 eggs + 2 egg yolksA pinch of salt500ml milk10cl rum1  vanilla podMethod Mix first five ingredients (without any lumps) in a bowl .Add milk & stir again. Half the vanilla pod with a sharp knife & scrape the seeds.Add to the batter & keep aside for 3 hours.If the batter is thick, add some more milk. ***Heat a nonstick pan / griddle with little oil. Pullatlu  Ingredients1cup flour1 cup rice flour1 cup semolina1 tsp cumin seeds125g yogurt3 cups of waterSalt to taste MethodMix all the of the ingredients to get a semi thick batter. Keep aside for 10 hours.Heat a nonstick pan / griddle with little oil. Pour a ladle of batter & swirl it.Dribble some oil over the pancake.Flip & cook the other side Serve hot with chutney / curry.

Neer Dosa  Ingredients1 cup rice powder (sona masoori) 1/2 cup freshly grated coconut1 1/2 cup waterSalt to taste MethodBlend all the four ingredients to a fine paste.Cover & keep aside for an hour.If the batter is thick add some more water. ***Heat a nonstick pan / griddle with little oil. Pour a ladle of batter & spread carefully.Flip & cook the other side Serve hot with chicken curry.Mangaloreans serve these pancakes with  Kori Ghassi  / Kori Sukha .
