Mini Salmon Pancakes

Salmon Pancakes Ingredients1 canned salmon (drained)1 tsp salt2 shallots (chopped)1 green chilli (chopped)A small piece of ginger ( chopped)2 eggs1 tbsp baking powder150 ml milk150 g flour3 tbsp olive oil1 tsp fennel seedsChopped curry leaves / coriander leaves MethodIf you are using fresh salmon , cook & mince it. Onion- Semolina Pancake

Onion-Rava Dosa   Ingredients 1 cup wheat flour1 cup semolina3 cups water1 egg2 shallots finely choppedA piece of ginger(chopped)1 green chilli( chopped)Chopped curry leavesSalt to taste Method   Beat an egg with shallots,chilli, ginger,curry leaves & salt.Then mix it with the rest of the ingredients & keep aside for half an hour.Batter must be in semi liquid stage. Pancake with Raisins   Ingredients250g flour2 tbsp sugar30g melted butter30g butter15g fresh yeast2 eggsa pinch of salt250 ml milk1 cup raisins1/2 tsp cinnamon powder MethodDilute yeast in 100 ml warm milk. Batura

Batura Ingredients200g flour ( 2 glasses)125g yogurt10 g fresh yeast1/2 glass luke warm water1/2 tsp saltOil for fryingMethodDilute yeast in luke warm water with 1 tsp sugar . Set aside for 15 minuites.Mix all the ingredients & knead well.Cover the bowl with a damp cloth & keep aside for 1 hour.Take a lemon sized ball & flatten it into thick disc. Irish Boxty Pancakes

Irish Boxty PancakesIngredients3 medium size potatoes3 tbsp flour1 egg beaten1/2 glass milkSalt to tasteMethodPeel, grate & squeeze potatoes.Mix all the other ingredients & make a thick batter.If the batter is very thick add some more milk.Grease a nonstick pan with butter.Drop a spoonfull of batter.(Don't spread)Cook either sides until light golden brown.Serve with sugar & melted butter / blackcurrant jam.

On the "Mother's day" I'm posting my Mom's Puttu.Puttu is the traditional breakfast of Kerala .It's a steamed rice cake with coconut gratings.In ancient times, Puttu is prepared in coconut shell or bamboo.
