Yummy Easter pancakes

Pancake with Raisins   Ingredients250g flour2 tbsp sugar30g melted butter30g butter15g fresh yeast2 eggsa pinch of salt250 ml milk1 cup raisins1/2 tsp cinnamon powder MethodDilute yeast in 100 ml warm milk. In a bowl , whisk together egg +milk+sugar +salt.Pour the egg mixture & butter to flour & mix thoroughly  (without any lumps).Keep aside for half an hour.Add raisins & cinnamon powder. Batura

Batura Ingredients200g flour ( 2 glasses)125g yogurt10 g fresh yeast1/2 glass luke warm water1/2 tsp saltOil for fryingMethodDilute yeast in luke warm water with 1 tsp sugar . Set aside for 15 minuites.Mix all the ingredients & knead well.Cover the bowl with a damp cloth & keep aside for 1 hour.Take a lemon sized ball & flatten it into thick disc. Irish Boxty Pancakes

Irish Boxty PancakesIngredients3 medium size potatoes3 tbsp flour1 egg beaten1/2 glass milkSalt to tasteMethodPeel, grate & squeeze potatoes.Mix all the other ingredients & make a thick batter.If the batter is very thick add some more milk.Grease a nonstick pan with butter.Drop a spoonfull of batter.(Don't spread)Cook either sides until light golden brown.Serve with sugar & melted butter / blackcurrant jam.

Puttu - Steamed Rice Cake.

On the "Mother's day" I'm posting my Mom's Puttu.Puttu is the traditional breakfast of Kerala .It's a steamed rice cake with coconut gratings.In ancient times, Puttu is prepared in coconut shell or bamboo.   Onion uthappam   Ingredients1 cup rice flour1 cup urud dal powder3 cups water1 tsp salt1/2 tsp fenugreek powder2 shallots finely chopped1 green chilli( chopped)Chopped curry leaves MethodMix all the ingredients & keep aside for one hour.Heat a nonstick pan / griddle with little oil.
