Bourriol - Pancakes of Auvergne

Bourriols    Ingredients50cl luke warm milk 50cl water2 tbsp oil1 tsp sugar 15g fresh yeast 300g flour 200g buckwheat four Salt to taste Method Dilute yeast in luke warm milk with  sugar. Keep aside for 10mn. Mix both the flours. Add milk + water & stir well .(without any lumps). Keep aside for 3 hours. Heat a nonstick pan / griddle with little oil. Pour a spoon full of batter. Cook on both sides .   Eat with the topping of your choice. ( Fried Onions, Ham & Cheese )

Carrot Puttu

Carrot PuttuIngredients3 carrots 2 cups roasted rice flour 1 cup grated coconut 1/2 tsp  salt 200 ml hot water Coconut for layering(optional)Chopped curry leavesMethod Blend carrots & coconut & keep aside. It's Pancake Day - Roti Jala / Malaysian Lacy Pancakes/ Valayappam

    Roti Jala  Ingredients210g flour (Type 45)2 eggs (beaten)1/2 tsp salt1/2tsp turmeric powder240ml luke warm milk80 ml water Method Mix first four ingredients (without any lumps) in a bowl .Add milk & stir again.
