PikeletsIngredients200g flour (Type 45)4 tbsp sugar30g melted butterAn egga pinch of salt210ml milk1 tsp vanilla essenceMethodIn a bowl , whisk together egg +milk+sugar +salt.Sift flour with baking powder. Pour the egg mixture & butter to flour & mix thoroughly (without any lumps).Keep aside for half an hour.Heat a nonstick pan / griddle with little oil. Pour a spoon full of batter. Cook on both sides . Eat with the topping of your choice.

Banana Pancakes Ingredients2 bananas3 eggs1/4 tsp nutmeg powder1/2 tsp baking powdera pinch of salt70 g flour50 g sugarButter for frying MethodPeel & mash bananas and keep aside.Sieve flour & baking powder together.Add to the mashed bananas.Then add beaten eggs & sugar.Keep aside for 2 hours.Heat a non stick pan & add a knob of butter.When it's melted add a ladle of batter.Turn & cook the other side.Very Easy Very Tasty

Poori ( Puffed Indian bread ) Ingredients500 g flour250 ml water1 tsp saltoil for fryingMethodMix first three ingredients & knead well.Cover the bowl with a damp cloth & keep aside for 1 hour.Take a lemon sized ball & flatten it using a roller( 8/10 cm discs).Repeat the process with other dough balls. Heat plenty of oil.Gently slip the disc in hot oil.When poori pops fully, splash hot oil on the top.Turn over & fry the other side.Remove using a slotted spoon & drain on a kitchen paper. Idiyappam / Noolputtu (Kerala speciality)Ingredients200 g rice powder250 ml water ( I took 125 coconut milk + 125 water)30 g butterShredded coconutsalt to taste. Method Boil water. Pancake with thousand holes Ingredients250 g Semolina 250ml milk1 egg30 g Fresh Yeast 1 glass of water 1/2 tsp saltMethod Heat milk & water until just warm . Don't boil . Dilute yeast in it.Add egg, semolina & salt . Mix well & keep aside for 4 hours.In a nonstick pan make the pancakes. Wait until the whole pancake is covered with holes.Cook the other side.Serve with honey / maple syrup / sweetened coconut milk .

Polenta Pancakes Ingredients 2 cups polenta4 cups warm water1 tsp salt3 eggs1 green chilli chopped1 big onion finely chopped chopped curry leaves MethodMix first three ingredients & set aside for 2/3 hours.Beat 3 eggs with finely chopped onions,chilli & curry leaves.Add to the polenta & mix well.If the batter is thick, add some water.Heat a nonstick pan / griddle with little oil. Pour a spoon full of batter. Cook on both sides.Serve hot with curry / chutney.

Rava Idli Ingredients 500 g semolina4 yogurts (125 g each) 1 tsp salt 20 g fresh yeast 1 tsp sugar 1 bowl luke warm water MethodDilute yeast in luke warm water with 1 tsp sugar . Set aside for 15 minuites.Mix all the ingredients & keep aside of 2/3 hours, until it's doubled.Add some water if the batter is thick. Grease the Idli maker with oil & pour 1 tbsp of batter.Steam cook for 15 minuites. Serve with curry / chutney.
