Irish Boxty Pancakes

Irish Boxty PancakesIngredients3 medium size potatoes3 tbsp flour1 egg beaten1/2 glass milkSalt to tasteMethodPeel, grate & squeeze potatoes.Mix all the other ingredients & make a thick batter.If the batter is very thick add some more milk.Grease a nonstick pan with butter.Drop a spoonfull of batter.(Don't spread)Cook either sides until light golden brown.Serve with sugar & melted butter / blackcurrant jam.

Spicy Carrot Idli

Spicy Carrot IdliIngredients2 medium sized carrotsA piece of ginger2 green chillies2 cloves of garlic1 tsp fennel seeds500 g semolina4 yogurts (125 g each)1 tsp salt20 g fresh yeast1 tsp sugar1 bowl luke warm water (300ml)MethodBlend first five ingredients in a mixer & keep aside.Dilute yeast in luke warm water with 1 tsp sugar . Puttu - Steamed Rice Cake.

On the "Mother's day" I'm posting my Mom's Puttu.Puttu is the traditional breakfast of Kerala .It's a steamed rice cake with coconut gratings.In ancient times, Puttu is prepared in coconut shell or bamboo.   Onion uthappam   Ingredients1 cup rice flour1 cup urud dal powder3 cups water1 tsp salt1/2 tsp fenugreek powder2 shallots finely chopped1 green chilli( chopped)Chopped curry leaves MethodMix all the ingredients & keep aside for one hour.Heat a nonstick pan / griddle with little oil. Pour a spoon full of batter. (Don't spread)Cook both sides .   Serve hot with chutney / curry.

Scottish Pancakes - Pikelets

PikeletsIngredients200g flour (Type 45)4 tbsp sugar30g melted butterAn egga pinch of salt210ml milk1 tsp vanilla essenceMethodIn a bowl , whisk together egg +milk+sugar +salt.Sift flour with baking powder. Pour the egg mixture & butter to flour & mix thoroughly  (without any lumps).Keep aside for half an hour.Heat a nonstick pan / griddle with little oil. Pour a spoon full of batter. Cook on both sides .   Eat with the topping of your choice.

Spanish Desert - Banana Pancakes

Banana Pancakes Ingredients2 bananas3 eggs1/4 tsp nutmeg powder1/2 tsp baking powdera pinch of salt70 g flour50 g sugarButter for frying MethodPeel & mash bananas and keep aside.Sieve flour & baking powder together.Add to the mashed bananas.Then add beaten eggs & sugar.Keep aside for 2 hours.Heat a non stick pan & add a knob of butter.When it's melted add a ladle of batter.Turn & cook the other side.Very Easy Very Tasty

Carrot Upma

Carrot Upma Ingredients2 cups semolina3 cups water2 carrots2 chillies1 onion coarsely chopped1 tsp salt1 tsp urud dal seeds1/2 tsp musturd seedsa small piece of gingercurry leaves2 tbsp oilbutterMethodDry roast semolina in a pan for 8 min and keep aside.Wash, peel & cut the carrots in chunks.Just blend in a food processor & keep aside. Poori - Galettes de blé frites

Poori ( Puffed Indian bread )   Ingredients500 g flour250 ml water1 tsp saltoil for fryingMethodMix first three ingredients & knead well.Cover the bowl with a damp cloth & keep aside for 1 hour.Take a lemon sized ball & flatten it using a roller( 8/10 cm discs).Repeat the process with other dough balls. Heat plenty of oil.Gently slip the disc in hot oil.When poori pops fully, splash hot oil on the top.Turn over & fry the other side.Remove using a slotted spoon & drain on a kitchen paper.
