Rum Raisin Bread Pudding

Rum Raisin Bread Pudding Ingredients1cup raisins 2 tbsp rum4 slices of bread3 eggs(beaten)2 cups milk3 tbsp sugar25g butterDash of nutmeg powder Walnuts*Caramel*100g cane sugar4 tbsp waterMethodSoak the raisins in rum.Make caramel & spread at the bottom of a greased cake tinBoil milk in a thick bottomed vessel & transfer to a bowl.Soak bread in the milk for 5 mn.When completely absorbed, crush it. Goan Poss Ingredients1 cup full cream milkHalf cup milk powder1 tin condensed milk (375g)1 curd (125g)1/2 tsp nutmeg powder Nuts of you choiceMethodGently mix milk powder with milk.Then add curd & condensed milk.Mix until smooth & the add nutmeg powder.Pour it into greased ramekins & top with chopped nuts.Steam cook for 25-30mn, until it sets.Remove from fire & set aside to cool.Courtesy @ Fatima's Cuisine.

Semolina Pudding

Semolina Pudding Ingredients500ml milk80g semolina70g sugar60g butter2 eggs1/2 of a vanilla podFew raisins soaked in rumMethodBoil milk in a thick bottomed vessel.Half the vanilla pod & scrape the seeds. Add the pod & seeds to the boiling milk. Add semolina & sugar.Mix well with a wooden spatule.When it thickens, add chopped butter & remove from fire.Discard the vanilla pods & add beaten eggs.
