Cornmeal Porridge - Jamaican Special

Cornmeal Porridge  Ingredients1 cup cornmeal 2 tbsp oats( fine powder)3 cups water 2 cups coconut milk  2 tbsp condensed milk(sweetened)1 tbsp sugar A pinch of salt1 tsp vanilla essence1/2 tsp cinnamon powder1/4 tsp nutmeg powderMethodDry roast corn meal in a thick bottomed vessel.Stir in water & cook  for 5mn.When cooked, add coconut milk, sugar & condensed milk. Thai Pumpkin  Pudding

Pumpkin  Pudding Ingredients150 ml sweetened condensed milk200 ml coconut milk1 cup pumpkin (cooked & mashed)1 tbsp sugar2 eggs + 2 egg yolks1/2 tsp nutmeg powder*For caramel*3 jagerry cubes20g butter1/2 tsp cardomom powderMethodGently heat jaggery & water to make a thick syrup.Strain it & heat again. Palada Pradaman flavoured with Chakka Varattiyathu - Onam Special !!

Chakka Palada Pradaman Ingredients125g Rice Ada (Nirapara)2 cloves3 cups of milk 1/2 tin condensed milk(200g)A pinch of salt2 tbsp jack fruit fudge (chakka varattiyathu) 1/4 tsp cardomom powderRaisins & CashewsMethodSoak rice ada in warm water for 20 mn. Drain & keep aside.
