Nasi Lemak - Malaysian Coconut Milk Rice

Nasi LemakIngredients4 cups Thai rice4 cups water2 cups thick coconut milk1 tsp salt3 shallots (chopped)A piece of ginger (chopped)Knotted screw pine (optional)A lemon grass (optional)1 tbsp gheeA star anise + cinnamon stickMethodBoil water, add salt & keep aside. Mdardara - Lebanese Rice.

MdardaraIngredients3  cups cooked Basmati rice1 cup cooked brown lentils5 scallions (chopped)A pinch of saffron / 1/2 tsp turmeric powder1 tsp ground pepperSalt to tasteCoriander leaves2 tbsp ghee / oil Garam Masala (optional)MethodHeat the oil/ ghee in a frying pan.
