Narkel Naru with Carrot - A Bengali Sweet

Coconut + Carrot LadooIngredients1 cup freshly grated coconut / dessicated coconut1 cup grated carrot1 cup sugar100g Ricotta cheese25g butter / ghee1/2 tsp cardomom powderMethodHeat ghee in a non stick pan.Fry grated carrot for a while.Keep on low fire &  then add grated coconut along with sugar.Then add whipped ricotta cheese. Scottish Toffee

Scottish ToffeeIngredients 200g sweetened condensed milk200g sugar170 ml milk60g butter1/2 tsp  cardomom powderMethod Gently heat butter, sugar & milk in  heavy bottomed pan. When sugar is dissolved , add condensed milk. Stir with a wooden spatule on medium heat.When the colour changes , add cardomom powder. When it leaves the sides of the pan, remove from fire. (10mn) Pat it onto a greased dish & cut into squares.Store in an airtight container.
