Strufoli - Italian Doughnuts

Strufoli Ingredients 250g ricotta cheese 150g flour2 eggs + An egg yolk2 tbsp sugarA pinch of saltZest of an orange10 g fresh yeast I tsp vanilla essence Oil for frying Method  Mix all the ingredients to get a stiff dough. Channa Dal Burfi

Channa Dal BurfiIngredients100g channa dal ( Bengal gram) 100g sweetened condensed milk400ml milk1/2 cup dessicated coconut2 tbsp sugar1/2 cup ghee1/2 tsp cardomom powder (elaichi)Almonds & Pistachios.MethodSoak the channa dal in water & keep aside for 3 hrs.Strain off the water & cook the dal in 2 cups of milk.When soft , remove from fire &  keep aside to cool.Coarsely grind the cooked dal.Melt ghee & fry daal paste to  light golden brown.Add the  remaining milk & mix well.Then... Narkel Naru with Carrot - A Bengali Sweet

Scottish Toffee

Scottish ToffeeIngredients 200g sweetened condensed milk200g sugar170 ml milk60g butter1/2 tsp  cardomom powderMethod Gently heat butter, sugar & milk in  heavy bottomed pan. When sugar is dissolved , add condensed milk. Stir with a wooden spatule on medium heat.When the colour changes , add cardomom powder. When it leaves the sides of the pan, remove from fire. (10mn) Pat it onto a greased dish & cut into squares.Store in an airtight container.
