Alcapuria - Deep Fried Snack of Puerto Rico

Malai Ladoo for Diwali

 Malai LadooIngredients500 g Ricotta cheese400g sweetened condensed milk (1can) A pinch of saffron5 cardomom pods3 tbsp sugarChopped Pistachios MethodBlend cardomom with sugar & keep aside.Take ricotta cheese in a heavy bottomed vessel. Add condensed milk & mix with a wooden spatule.Stir continuously over medium heat.Add cardomom & saffron & mix well. When the mixture leaves the sides of the pan, remove from fire . Set aside to cool & then shape into ladoos. Happy Diwali

Kuih BomIngredients100g mashed sweet potato150g rice powder50g flour40 g sugarA pinch of salt1/2 tsp cardomom powder100 ml waterDate pasteSesame seedsOil for fryingMethodMix first six ingredients & make a stiff dough.Keep aside for half an hour.Make small sized date balls.
