Radish Yogurt Curry - Kalan

Radish Moru CurryIngredients1 bunch of radish2 tomatoes3 yogurts (125 g each)1 tbsp oil.1 glass water1 tsp salt2 tbsp coconut paste (optional)1/2 tsp turmeric powder1/2 tsp chilli powder1 tsp cumin seeds 1 tsp mustard seeds. 1/2 tsp cumin powdercurry leaves.Method Wash & cut radishes in strips *4. Kerala Style Cabbage Stir Fry.

Cabbage ThoranIngredients1/2 cabbage thinly sliced2 onions thinly sliced 2 tbsp dessicated coconut/ freshly grated coconut2 green chillies (half slit)1/2 tsp turmeric powder1 tsp salt 1 tbsp oil.1 tsp mustard seeds1 tsp urud dal seeds1/2 glass waterCurry leaves  MethodMix the first six ingredients in a large bowl. Moroccan Fassoulia

Fassoulia       Ingredients500 g french beans (chopped)2 tomatoes (chopped)2 onions (chopped)2 tbsp olive oil1/2 tsp salt1/4 tsp turmeric powder1/2 tsp chilli powder1/2 tsp cumin powderCurry leavesMethodHeat oil in a pan.Fry onions till light golden brown .Add chopped beans & fry again.Fry for 5 min.Add salt,chilli powder & turmeric powder.Add  choped tomatoes & some water.Cook for about 8 min.Garnish with cumin powder & curry leaves. Oolan - Kerala Special

Courgette OolanIngredients 250 g canned black-eyed beans /Half cup black-eyed beans 2 cups water 2 courgettes (diced)1 tsp ginger paste1/4 tsp turmeric powder (optional)3 green chillies ( half slit)1 cup coconut milkSalt to taste Curry leavesMethod Pressure cook the black-eyes beans in 1½ cups water and keep aside. Cook courgettes with chillies, ginger, salt and 1 cup water. Add the cooked beans and allow to simmer for a while. Add coconut milk & garnish with curry leaves. Oolan is prepared for Onam. In kerala we use ash gourd.

French beans stir fry

Beans MezhukkupurattiIngredients250g french beans1/2 tsp chilli powder1/4 tsp turmeric powder2 tbsp coconut oil / veg oil 1/4 tsp cumin powderCurry leavessalt to tasteMethodHeat oil in a pan & splutter musturd seeds.Add chopped beans & fry for a while.Add chilli powder, tumeric powder, salt & stir again.Add some water & cook for 5 mn.When the sauce is completely dried, add 1 tbsp cocconut oil. Garnish with fresh curry leaves.  Serve with rice.
