Beet Stuffed Pancakes

Beet Elanchi  Ingredients250 g flour (Type 45)75 g sugar25 g melted butter3 eggsA pinch of salt500ml milk1 tsp vanilla essenceFor Filling 1 cup freshly grated coconut / dessicated coconut1 cup grated beetroot2 cups sugar3 tbsp water/ milkRaisins & cashews1/2 tsp cardomom powderOil/ ghee for frying.MethodMix first five ingredients (without any lumps) in a bowl .Add milk & stir again.
