Srilankan Brinjal Moju.

Eggplant Moju Ingredients An eggplant (cut in sticks) 1/2 tsp turmeric powder Salt to taste Oil for frying***2 tsp musturd paste(Dijon)2 tbsp vinegar1/2 tsp red chilli powder1 tbsp tomato ketchup1 tsp ginger +garlic paste***2 cloves2 shallots + an onion (sliced)2 green chillies(half slit)Curry leavesGaram masalaSalt to tasteMethod Cut the eggplant into sticks & keep aside.
