Elanchi - Malabar Pancakes

Elanchi  Ingredients250 g flour (Type 45)75 g sugar25 g melted butter3 eggsa pinch of salt1/2 l milk1 tsp vanilla essenceFor Filling 1 cup freshly grated coconut / dessicated coconut2 cups sugar3 tbsp water/ milkRaisins & cashews1/2 tsp cardomom powderOil/ ghee for frying.MethodMix first five ingredients (without any lumps) in a bowl .Add milk & stir again.
