Mutton Curry

Mutton Curry

Muttoncurry

Ingredients
1 tbsp curry powder
2 tbsp curd
1 tsp salt
1 kg mutton
2 onions, 4 carrots, 2 potatoes
3 garlic cloves
A small piece of ginger
A green chilli (half slit)
2 tbsp oil
1 star anis
1 tsp ground pepper
Coriander leaves / Curry leaves
Method
Mix  first three ingredients.
Add the curry paste to the mutton pieces & mix well.
Cover & refrigerate for an hour.
Blend garlic,ginger & chilli  in a mini food processor.
Warm the oil in a casserole . Add star anis.
Add shredded onions.
When it turns golden brown, add ginger-garlic paste.
Then add mutton & carrots.
Stir for a while & add water .
Bring to the boil, then turn the heat down and simmer for 20min, stirring from time to time.
When half cooked, add potatoes.
If mutton is cooked thoroughly , remove from fire.
Garnish with coriander leaves & ground pepper.
Serve hot with  "Baguette" (long skinny French bread)/ rice / naan.
