Blackberry Clafouti - French Custurd Cake.
Clafoutis aux mûres
Ingredients
500g blackberries
3 eggs
50g flour
50g almond powder
100g sugar
1/2 tsp vanilla essence
25 cl liquid cream / milk
20g butter
1/2 tsp ground cinnamon
1 tbsp sugar
Method.
Preheat oven 180°C.
Warm milk with butter & keep aside..
Beat eggs. Add flour, almond powder & sugar.
Pour cream into the prepared mixture. ixture.
Stir thoroughly ( without ant lumps).
Butter a cake pan & arrange blackberries.
Pour the prepared custurd over the blackberries.
Bake for 35mn.
Remove from the oven.Sprinkle sugar & ground cinnamon on the top.
Return to the oven for another 5 mn until the sugar caramelizes.
Serve warm.

Clafouti, French custurd cake originated from the Limousin region. Cherry Clafouti is famous. U can also prepare with other fruits like apricots, apples & peeches. But the one prepared with apples & pears are called "Flognarde".
