Beef Rendang - Malaysian Spicy Beef
Beef Rendang
Ingredients
1 kg beef(cut in cubes)
1 tsp salt
1/2 tsp turmeric powder
1tsp pepper powder
* Rendang paste*
3 shallots
4 garlic cloves
A piece of ginger & galangal
2 tsp kashmir chilli powder

A star anise
4 cardomom pods
3 cloves
A cinnamon stick
1 lemon grass stalk
Tamarind (berry size)
1 cup freshly grated coconut (toasted)
3 Kaffir leaves / Curry leaves
2 cups of coconut milk
Oil for frying
Coriander leaves / Curry leaves
Method
Marinate beef with salt pepper & turmeric.
Keep it in the refrigerator for an hour.
Soak tamarind in a cup of water & keep aside.
Dry roast the grated coconut to golden brown.
Cool & blend into fine powder.
Warm the oil in a casserole. Add cinnamon,cloves,cardomom & star anise.
Add the rendang paste & fry for a while.
Then add marinated beef & stir fry until it is well browned.
Add tamarind juice (discard the pulp) & sufficient amount of water.
Cover & cook for an hour, stirring from time to time.
Reduce the heat & add coconut milk.
Then add roasted coconut powder & sir well.
Garnish with coriander leaves/curry leaves.
Discard the lemon grass stalk & serve with coconut milk rice.
