Kokosbrot - Coconut Cake
Kokosbrot
Ingredients
250g flour
100g sugar
100g butter
100g dessicated coconut
2 eggs
175 ml coconut milk
100g thick cream
2 tsp baking powder
1/4 tsp nutmeg powder
A pinch of salt
Method
Preheat the oven to 200°C.
Cream together the butter, sugar & salt .
Then add beaten eggs & mix well.
Sieve the flour and baking powder together and fold into the cake mixture.
Then add dessicated coconut & milk.
Add nutmeg powder mix well.
Pour the batter into the greased cake tin.
Bake until a toothpick inserted into the middle of the cake comes out clean.(55mn)
Serve this coconut cake with tea.
