Srilankan Plantain Curry

Plantain Curry

Ingredients
1 green plantain (skinned & cut in sticks)
1 tsp salt
1 tsp red chilli powder
1/2 tsp turmeric powder

1/2 cinnamon + 2 cardomom + 2 cloves
2 oniions (chopped)
1 tomato (chopped)
1 green chilli ( half slit)
1/2 tsp garlic paste
1/4 tsp ginger paste

2 tsp coriander powder
A pinch of fenugreek powder
1/2 tsp cumin powder
1 cup coconut milk
A spring of curry leaves
Method
Marinate chopped plantain with chilli powder, turmeric powder & salt.
Heat oil in a pan & fry them till light golden brown. Keep aside.

Heat oil in pan with cinnamon,cloves & cardomom.
Add chopped onions & fry till translucent.
Then add ginger + garlic along with chopped tomatoes & chilli.
Fry for a while & then add masala powder.
Cover & cook for 5 mn, with sufficient amount of water.
Then add fried plantain & stir well.
Cover & cook for another 5mn.
When the sauce is dried, remove from fire.
Add coconut milk & stir well so that all the ingredients are mixed.
Garnish with cumin powder & curryleaves.
Serve with rice / any other bread.
