Curried Oysters - Malabar Style
Fried Oysters
Ingredients
400g shucked oysters
2 big onions(finely sliced)
2 garlic cloves
A piece of ginger
1/2 tsp chilli powder
1/4 tsp turmeric powder
Freshly ground pepper
Oil for frying
Salt to taste
Coriander leaves / Curry leaves
Method
Heat oil in a skillet & fry onions till light golden brown.
Then add ginger+garlic paste & fry for a while.
Add red chilli powder, turmeric & salt.
Fry for a few minuites & then stir in oysters.
Add a cup of water & mix well.
Cover & cook for 10mn.
When the sauce is dried, remove from fire.
Garnish with freshly ground black pepper & curry leaves.
Serve with rice/ any type of bread.
