Salsa Chicken Casserole


2 chicken breasts(cubed)
12 tsp red chilli powder
1/4 tsp turmeric powder
Salt to taste
A bay leaf
3 thyme sprigs
2 green onions (chopped)
3 cloves of garlic(chopped)
1 can red beans( rinsed & drained) / 2 cups cooked red beans
1 can corn kernals(rinsed & drained)
A  green chilli(half slit)
1 tsp red chilli powder
1 tbsp tomato puree
1/2 cup water + a chicken stock
Salt to taste
Oil for frying
4  cups cooked Basmati rice / Jasmin rice
Grated cheese
Mainate chicken pieces in first three ingredients .

Cover & keep asde for an hour;
Fry both sides & keep aside.
Dilute chicken stock cube in water.
Heat oil saucepan & fry bay leaf & thyme springs.
Then add chopped onions & fry till light golden brown.
Then add chopped garlic & green chilli.
Fry for a while & then add red beans & corn.
Add chicken stock & fried chicken cubes 
Cover & cook for a while.
Then add cooked rice & toss several times with a wooden spatule. 
Garnish with freshly ground pepper & coriander leaves. 
Preheat oven to 180°C. 
Transfer the prepared rice into baking tray.
Top with grated cheese & bake for 5 mn.
