Vendakka Coconut Curry - Kerala Special
Ingredients
1 cup freshly grated coconut
1/2 tsp cumin seeds
3 shallots
2 garlic cloves
Few curry leaves

250g lady's finger / Okra
1 big onion (chopped)
2 big tomatoes (chopped)
2 green chillies(half slit)
A piece of ginger (chopped)
1/2 tsp red chilli powder
1/4 tsp turmeric powder
@ Temper
1 tsp mustard seeds
1/4 tsp fenugreek seeds
2 shallots(thinly sliced)
A dried red chilli
Curry leaves
Method
Blend the first five ingredients to a fine paste.
Heat oil in a pan & fry chopped onions to light golden brown.
Add chopped okra's & ginger.
Thn add salt, red chilli powder & turmeric powder.
Stir for a while & then add chopped tomatoes.
Then add a cup of water.
Cover & cook on low fire for 10 min.
When cooked, add blended coconut & just swirl the skillet.

Heat oil & splutter musturd seeds & fenugreek seeds.
Then fry sliced shallots to light golden brown.
Add dried chilli & curry leaves.
Add this to the prepared curry.
Serve with rice.
