Mangalore Kayi Vade - Coconut Fritters
Ingredient
2 cups freshly grated coconut
1 tsp cumin seeds
2 shallots
A small piece of ginger
2 green chillies
Few coriander leaves / curry leaves

1 cup roasted rice powder
1 tsp white sesame seeds
1/4 cup of luke warm water
1 tbsp ghee / oil
1 tsp salt
A pinch of hing
Oil for frying
Method
Coarsely grind first five ingredients in a blender.
Then add the blended mixture to the rice powder.
Boil water with salt & add to the rice mixture.
Add ghee, sesame seeds & hing.
Mix with a wooden spatule to get a stiff dough.
Leave aside to cool.

Make lemon sized dough balls & flatten into a disc.
Heat oil in a frying pan.
Cook both sides of the vada's until golden brown.
Remove using a slotted spoon & drain on a kitchen paper.
U can prepare 4/5 vada's at the same time .
Serve hot with tea or as a starter.
